In 1994, Yan Qi resigned from his stable career in spite of his family's opposition and opened a small restaurant in the town of Baishi, outside Chongqing.
The restaurant is so small that only 5 tables can be set.
However, although the restaurant is small, it has a loud name, "Tao Ran Ju".
"We have just started learning business, and business has been very mild."
Yan Qicao said with a strong Chongqing accent, she thought: how to attract customers with special services?
The opportunity came.
A professor from Southwest Agricultural College has cultivated artificial breeding of ecological snail, which is eaten by fresh vegetables and wild grass. It is large and full of meat, fresh and tender, and has no smell of mud. It is an ecological food.
After receiving this information, Yan Qi bought some snail and returned to cook with him.
"I tried with the chef to make all kinds of flavors of the small snails, pickled peppers, bridging, dipping, and then tasting them to the guests, so that we repeatedly reused thousands of Jin's snail."
Finally, they used the Chongqing chili chicken fried method to create the spicy snail, a local dish.
"When you start a business, you can only sleep two or three hours a day. Everything must be done with your own strength. Sometimes you can't straighten your waist, you have to give up.
But I can't be frightened by the difficulties if I quit halfway and start my business.

In order to promote the innovative dishes, Yan Qi personally gave the spicy snail to the freeway visitors for free.
The customer's praise was ten, ten, and Yan Qi's shop quickly expanded from 5 tables to more than 30 tables, and then more than 60 pieces later. The hot pepper snail quickly became popular.
The spicy snail has become the signboard of Tao Ren Ju, and has won the reputation for Tao Ren Ju.
In 1998, the chili snail was assessed as "Chinese famous dish" by the relevant departments. On this theme, the "Tao Ling" feast was awarded the highest prize in the Chinese restaurant industry at the third China Food Festival.
After the success of the chili snail, the innovative dishes such as taro chicken, pickled peppers and chili fish were put on the table repeatedly.
Yan Qi, Yan Qi, is a woman with meticulous details. She also has a grand vision that does not allow her to be seen.
In 2003, she took Tao Ren Ju in Beijing.

Speaking of training staff, Yan Qi spoke up quickly, and his eyes were proud. "From chef to waitress comes from our own vocational training school, and it is a pure Chongqing people.
Why? Because the local people know most about local cuisine and have the most sentimental feelings. The local character can also affect the taste of local cuisine. This is the mystery of Chongqing's taste of "original ecology".
People who work with their hands will learn to do things by heart.
She instilled this idea into every employee through her own words and deeds.
"Others cook with their hands, and we must do it with our hearts."
Tao Ran Ju has gone through the primitive accumulation stage. Will he pursue diversified development in the future?
Yan Qi replied, "no matter when, dining is the main business of Tao Ren Ju, I like to do this business, and I make catering as a career."
"Everything else can be put aside, but things need to be reassured everyday, so we can't be hesitant."

So far, Tao Ran Ju catering group has provided employment opportunities for more than 60 thousand people, and has trained more than 2 migrant workers and laid-off workers with professional and technical expertise.
Why is the three sentence of a catering enterprise headed by a new job?
Yan Qi and Yan Qi thought carefully before answering the question seriously: "after having money, the most important thing is to repay the society and repay the folks."
How to repay it?
She felt that every family should not be troubled by the problem of employment and should be the responsibility of entrepreneurs. So she guided poor college students to acquire employment skills by giving donations and studying, etc., and provided 1000 jobs for women laid off workers in Chongqing every year.
In the Three Gorges Reservoir area, when she saw that most of the peasants were at home, she decided to invest 10 million yuan in the reservoir area to open two Tao Ran Ju stores, which took 3000 immigrants to work at the same time. When it was learned that many immigrants had no technical expertise, it was very difficult to find jobs outside the city. She immediately invested 150 thousand yuan to train 30 chef free for the immigrants in the reservoir area of Yunyang. The children in the reservoir area, especially girls, were hard to go to school. She donated 200 thousand yuan and set up a "Tao Ran Chun Lei Chun primary school" in the reservoir area, so that those who dropped out of school could receive formal school education.
It is difficult for migrant workers to find jobs Nowadays, mainly because they lack technical expertise.
In the beginning, the workers recruited by Tao Ran lived almost one hundred percent without technology, but after training and improvement, they finally became technical experts.
Yan Qi proudly told reporters that Tao Ran's cooking training class was free. Now, a large number of technical workers from the cooking training course of Tao Ren Ju have been active in all kinds of posts in the national catering industry.
Is she planning to continue training work so far?
"I also need to send trained personnel to foreign countries, so that the former migrant workers and laid-off workers earn foreign exchange."
Yan Qi said this with gleaming eyes. "It is expected that 200 people can be pported abroad this year.
In the future work, the group will attract more rural youth to guide and mobilize them to take the lead in learning new knowledge, new technology and new skills, and continuously pmit them to all parts of the country and around the world.
